Grilled Lentil Pita Sandwiches

 Servings: 4 1 bell pepper 1 onion 2 cloves garlic 200g chickpeas 1 tsp salt 1tsp paprika 1 tsp cumin 1 tsp dried oregano 1 tbsp tomato paste fresh parsley 60g tahini 0.5 lime 1 tsp maple syrup Steps:  1. Fry bell pepper, onion, garlic.  2. Add chickpeas and seasonings, and cook 2-3 minutes.  3. Stir in a handful of fresh parsley. 4. Cut pita pockets in half, and stuff each half with filling. 5. Brush each half with olive oil and fry each side until golden brown. For whipped tahini dipping sauce: 1. Whisk together 1/4 cup tahini, lemon juice, maple syrup, and salt, gradually adding 60ml water until the sauce reaches a creamy consistency. (From: Fitgreenmind)
